摘要:建立了一种用碱提取面包酵母中葡聚糖的方法,该法制得的酵母葡聚糖是以 β(13) D葡聚糖为主链,有约 12% 的β(16)分枝的均一性多糖,乙酸能作用 β(16)键,使粘度增加;葡聚糖酶能作用β(13)键,使粘度下降。
A method for the production of yeast glucan was developed by utilizing alkali extraction. The major component is a branched β (1 3) glucan of yeast glucan with 12% of β (1 6) glucosidic interchain linkage. The viscosity of yeast glucan increased by treating with acetic acid to alter the β (1 6) linkages, or discreased with glucanase to alter the β (1 3) linkages.
