摘要：探讨了新一代的构造脂质 (SL)型低热量油脂Salatrim的制备方法。在 1,3专一性脂肪酶LipozymeTLIM的催化下 ,三乙酸甘油酯 (GTA)和三油酸甘油酯 (GTO)的酯交换反应的最佳工艺条件为 :水分含量 1% ,反应温度 5 5℃ ,GTA和GTO的摩尔比 2∶1,反应时间 18h ,得率为 76 %。
The method for preparation of new low calorie structured lipids of Salatrim was studied.The optimum conditions for preparing Salatrim in Lipozyme TL IM catalyzed interesterification of triacetin and triolein are that water content less than 1% ,reaction temperature 55℃,substrate mole ratio 2∶1 , reaction time 18 h.Under the conditions,the yield is 76%.
