摘要:用生物可降解聚乳酸(PLA)薄膜包装蟹味菇,放置于25℃、相对湿度(RH)80%环境储藏,对照组设置以聚乙烯(PE)薄膜包装,25℃、相对湿度(RH)80%储藏和无包装室温储藏,研究PLA薄膜对蟹味菇保鲜效果的影响。相同时间间隔内评定蟹味菇感官,检测失重率、可溶性固体物、游离氨基酸、丙二醛(MDA)、褐变度等品质指标以及包装袋内O_2、CO_2体积分数。结果表明,第6天PLA包装白玉菇褐变度4.7,低于PE包装的6.8;可溶性固体物PLA包装是1.3%,优于PE包装0.7%;游离氨基酸PLA包装是30.1 mg/100 g,高于PE包装10.8 mg/100 g;丙二醛含量PLA包装是5.8 nmol/g FW,低于PE包装7.7 nmol/g FW。无包装、PE和PLA包装分别可以保存白玉菇1,3和6 d,PLA薄膜包装能明显延长白玉菇货架期。
The White Hypsizygus marmoreus was packaged under air with polylactic acid (PLA) film and stored at 25 ℃, 80% relative humidity (RH). The White Hypsizygus marmoreus packaged with polyethylene (PE) film, stored under the same condition and without packaging, placed under room condition were used as conlrols. The effect of PLA packaging on the preservation of white Hypsizygus marmoreus was evaluated by analyzing sensory quality and biochemical properties of white Hypsizygus marmoreus. The mushroom quality parameters including volume fraction, weight loss, browning degree, soluble solid, free amino acids, malondialdehyde (MDA) were studied. The results indicated that the storage time of white Hypsizygus marmoreus packaged without film, with PE film and PLA film were 1, 3 and 6 d respectively. The browning degree of white Hypsizygus marmoreus with PLA-packaging was 4.7, lower than that with PE-packaging which was 6.8. In addition, the content of soluble solids and free amino acid of white Hypsizygus marmoreus packaged with PLA film were 1.3% and 30.1 mg/100 g respectively, which exhibited the enhancement to 0.7% and 10.8 mg/100 g of white Hypsizygus marmoteus packaged with PE film. Further more, the MAD of white Hypsizygus marmoreus with PLA-packaging was 5.8 nmol/g FW, lower than that with PE-packaging was 7.7 nmol/g FW. Compared with no packaging and PE packaged, the white Hypsizygus marmoreus packaged with PLA had better quality on browning degree and less rotting rate. The PLA film could extend the shelf-life of white Hypsizygus marmoreus.
