摘要:NOVELTY - Bacterial-derived protein comprises amino acids sequence of 266 amino acids (SEQ ID NO: 2), given in the specification. A fusion protein is obtained by linking the label at the N-terminus or C-terminus of the protein of (SEQ ID NO: 2). The protein is obtained by substituting, deleting or adding the amino acid sequence of (SEQ ID NO: 2) via one or multiple amino acid residues and having the same function. USE - Bacterial-derived protein is used as chitosanase, hydrolyzed chitosan and in preparation of chitooligosaccharides and chitosan oligosaccharides (all claimed). ADVANTAGE - The bacterial-derived protein is utilized for preparing chitosan and chitooligosaccharides, which haave good enzymatic property, low temperature condition and high activity. The enzymatic equipment requirement is low. The chitosan oligosaccharide has high polymerization degree with mild reaction condition, low energy consumption and eco-friendly. DETAILED DESCRIPTION - INDEPENDENT CLAIMS are included for the following: (1) a method for producing chitosanase, which involves culturing a recombinant strain to obtain a chitosanase; and (2) a method for producing chitooligosaccharides by hydrolyzing chitosan with the protein to obtain the desired product.
