摘要：NOVELTY - alpha -amylase comprising (a) fully defined 493 amino acid residues (SEQ ID NO: 3) as given in the specification or (b) a sequence obtained after addition, deletion and/or substitution of at least one amino acid to SEQ ID NO: 3 and having function of alpha -amylase. USE - The alpha -amylase is useful in preparing food, wine making, beverage and pharmaceutical industries (claimed). ADVANTAGE - The alpha -amylase: enables heterogenous expression in rice and Aspergillus niger; has high optimal reaction temperature, high heat stability; and is suitable for industrial application. DETAILED DESCRIPTION - INDEPENDENT CLAIMS are also included for alpha -amylase gene, which is coding alpha -amylase; a recombinant plasmid, comprising alpha -amylase gene linked to an expression vector; an expression cassette, a transgenic cell or a recombinant fungi containing the alpha-amylase gene; and preparing alpha-amylase.
