摘要:利用水、酸化水、乙醇的水溶液、酸化水和乙醇的混合物等提取剂从新鲜的紫苏叶片中提取花色素苷,经XAD-7树脂柱浓缩得到色素样品,并考察色素在黑暗或光照,空气或氮气,冷藏或冷冻及室温下的储藏稳定性。结果表明:在乙酸-乙醇水溶液(V(CH3COOH)∶V(C2H5OH)∶V(H2O)=6∶40∶54)中提取6h可获得最佳提取效果,花色素苷质量浓度为175.0mg/L,色度为54.03,色调角为26.63°。在-18℃条件下避光隔绝空气保存,紫苏色素的降解速度最慢,储藏稳定性最好。
Extrac studied in this paper SO ution and mixture tion condition and physicochemical property of red pigment in perilla were both The extracting media used for the extractions include water, acidified water ethanol of ethanol and acidified water at different volume ratios. XAD-7 macroporous resin column chromatography was employed for further purification and concentration of pigment samples. High yields of pigment (175.0 mg/L) could be obtained with the chromaticity 54. 03 and hue angle 26. 63°, when the extracting condition was mixture of ethanol and acetic acid (V(CH3COOH) : V(C2H5oH) : V(H20) =6 : 40 : 54) for 6 h. On the basis of stability test, the stability of anthocyanin was best at lower temperature(--18℃) in dark and without air.
