摘要:Hemerocallis was valued for its ornamental, nutritional, and medicinal properties, but research on the aroma characteristics of Hemerocallis hydrosol was limited. Here four deep eutectic solvents (DES) and water were used to extract hydrosols from Hemerocallis. The effects of different solvents on the volatile compounds and antioxidant properties of Hemerocallis hydrosols was studied by Gas chromatography-olfactory-mass spectrometry (GC-O-MS) analysis and ABTS radical scavenging assays and the extraction mechanism of DES elucidated through theoretical calculations. The hydrosols extracted using DES3 (choline chloride and D-glucose) showed the strongest extraction ability. Meanwhile, its antioxidant capacity was the highest, roughly twice that of the water-extracted hydrosol. The odor activity values (OAV) revealed ten key aromatic compounds, such as eugenol, D-carvone, 1-nitro-2-phenylethane, 2-methoxy-4-vinylphenol and so on. Theoretical calculations suggested that DES3 is useful for forming more hydrogen bonds and stronger van der Waals interactions with the aromatic compounds. ? 2025, The Authors. All rights reserved.
