摘要:In this paper, to examine the operation strategies of fresh produce retailers, we present a dynamic programming model of revenue management that include consumer choice behavior. First, a dynamic pricing strategy for multi-batch fresh produce that matches real-time freshness is developed by solving the dynamic programming model. Second, a replenishment policy is developed that considers both the freshness and inventory of the previous batch of fresh produce. Finally, four heuristic replenishment policies are proposed to simplify the replenishment operations. The results show that when the inventory of the remaining fresh produce is lower than a certain threshold, the order quantity depends on the freshness and the inventory of the remaining fresh produce; when the inventory exceeds this threshold, the order quantity is related only to the freshness. Most importantly, the order point and the order quantity decrease with the initial freshness. Moreover, the three of four heuristic methods we proposed can achieve more than 95% profit of the optimal strategy.
