摘要::研究了非厌氧条件下HJ9211冻干双歧杆菌在不同温度下的存活特性,并对其存活期进行了加速预测及验证,同时对不同浓度HJ9211冻干粉在不同pH的人工胃液中的存活情况进行了研究。结果表明:(1)存活期的预测数据与实测验证数据吻合;(2)在非厌氧情况下,HJ9211冻干粉的存活性受温度影响较大,失活系数K4℃=0.000018,K37℃=0.0306,K45℃=0.207,K55℃=0.997;(3)人工胃液对其存活有一定影响,尤其在低pH值时影响更大,存活率为10%(pH=2~3)和0.01%(pH=1),当活菌浓度较低时这一现象更为显著,分别为1%和0.01%。
In non anaerobic condition, the survival property of freeze dried bifidobacterium HJ9211 in different temperaturs were studied, and its survival time was accelerated speed of prediction and verified. In artificial gastric liquid of different pH, the survival property of freeze dried bifidobacterium HJ9211 in different concentration is investigated. It is shown that, ① the accelerate speed of prediction result was re conciled with the experimental value; ②in non anaerobic condition, its inactive constants ( K t ) in different temperature are 0.000 018(4℃), 0.030 6(37℃),0.207(45℃) and 0.997(55℃) respectively; ③ in artificial gastric liquids of different pH, its survival viabilities are 10 -1 ~10 -2 (pH=2~3) and 10 -4 (pH=1),respectively.
