摘要:采用BrabenderRheotron流变仪及带槽测量系统,测量了不同体积分数的浓可可悬浮体(I)在60℃下的流变特性。实验发现,I呈明显的非牛顿性,剪应力与剪切率服从Herschel-Bulkley方程。I的屈服应力采用外推法及多叶片法测量求出,并使用适当的模型以表示不同体积分数下悬浮体的屈服应力,此计算值在合理范围内与测量值相符。对高浓度I的弹性贮能模量的测量表明,物系具有弹性。物系触变性则用流动曲线滞后环的面积表示。实验还发现,加入大豆磷脂可以大幅度降低物系的粘度,而加入少量水分却使粘度大为增加。
The rheological properties of concentrated cocoa suspension with different par-ticle concentration were tested at 60℃by Brabender Rheotron equipped with grooved coaxial rotational measuring system manufactured in our laboratory。 Strong non-Newtonian be-haviour including shear thinning,yield stress,thixotropy was found from experiment.The relation of shear stress and shear rate follows the Herscher-Bulckley equation. The yield stress of suspension was determined by extrapolation of rotation speed and from vane method.A model was proposed to describe the yield stress at various particle concentration and the result is consistent with measuring value. The energy storage modulus of concentrat-ed cocoa suspension was also measured,which indicated its elasticity.The hysteresis loop area of flow curve was used to determine the thixotropy of suspension, The viscosity decreases owing to add lecithin,while it dramatically increases when some water exists in suspension·
