摘要:为研究武夷岩茶鲜叶香气相关酶基因表达量差异与成茶品质的关系,将武夷肉桂、水仙、瑞香的在体鲜叶进行RNA提取,对3个茶样品中的β-葡萄糖苷酶(CsBG)、β-樱草糖苷酶(CsBP)、多酚氧化酶(CsPPO)、过氧化物酶(CsAPX)基因表达水平进行分析。结果显示:肉桂中有较多的CsPPO表达,而水仙和瑞香中几乎没有,表明肉桂之所以呈现更强的苦涩味和浓郁感,是由于CsPPO表达较多的原因;水仙中的CsBP比瑞香中表达量多,而肉桂中几乎没有,反映出水仙的天然花香更为浓郁;肉桂、水仙、瑞香中均含有CsBG,但瑞香中最多,解释了作为高香品种的瑞香为何糖苷类香气更浓;3种茶叶中均含有CsAPX,其中瑞香中含量最少,肉桂和水仙中含量相当,反映了在茶汤色泽上肉桂和水仙颜色比瑞香更浓。
In order to study the expression profile of enzyme genes in the fresh leaves of Wuyi rock tea and the effect on the quality of tea formation,RNA extraction was carried out in the fresh leaves of Camellia sinensis cv.Shuixian,Rougui and Ruixiang.The beta-glucosidase(CsBG),beta-primrose glucosidase(CsBP),polyphenol oxidase(CsPPO)and peroxidase(CsAPX)genes expression of were analyzed.The results showed a small amount of CsPPO expression in Rougui and few of the Shuixian and Ruixiang,indicating that the Shuixian and Ruixiang showed a stronger bitterness and strong sense of taste,probably due to the less expression of CsPPO.The CsBP expression in the Shuixian was more express than Ruixiang and almost no in the Rougui,reflecting the natural fragrance of Shuixian.The three species all express CsBG,but the most expression is of Ruixiang,which can explain that the aroma of Ruixiang in three kinds of tea is thickest.The three tea leaves all have CsAPX expression,but the content of Ruixiang was less Rougui and Shuixian.Then the color of Rougui and Shuixian can be considered heavier than Ruixiang.
