摘要:将小麦麸质蛋白原粉预压为圆片,采用无转子硫化仪研究其交联过程,并用拉曼光谱对小麦麸质蛋白中的双硫键进行表征。借鉴橡胶硫化机理,研究了模压温度、圆片厚度、硫化温度对小麦麸质蛋白交联过程的影响。研究结果表明:模压温度、圆片厚度对交联速度的影响不大,但反应活化能却随预压温度的升高而增大;随着硫化温度的升高,硫化平坦期缩短,交联反应速率常数增大。
Vital wheat gluten as agropolymer was preformed into disks via compression molding,the cross-linking process of the disks was investigated by rotorless curemeter,and the disulfide bonds intensity of cross-linking disks was characterized by Raman spectroscopy.According to rubber vulcanization mechanism,the influence of molding temperature,disk thickness and vulcanization temperature on the cross-linking process of wheat gluten was studied.The results showed that disk thickness and molding temperature had very weak effect on reaction rate;and that activation energy of the cross-linking increased with increasing temperature of preforming.With increasing vulcanization temperature of wheat gluten,the rate constant of the cross-linking increased,whereas plateau of vulcanizing curves shortened.
