摘要:挤压杂粮营养工程米是新兴的具有食疗保健功能的主食原料,尚不具有公认的评价方法和国家标准。本试验以传统主食大米的国家食品检验标准为依据,对挤压杂粮营养工程米的品控指标进行了研究,测定了挤压杂粮营养工程米的营养物质含量和质量安全指标,并与市售东北大米进行了对比。试验结果表明,杂粮营养工程米的粗脂肪含量为3.48%,蛋白质含量为15.06%,水溶性蛋白质含量为2.29%,灰分含量为1.22%,钾、铁、锌含量每百克分别为444.3 mg,3.44 mg,2.24 mg,营养成分含量高于市售东北大米,有更高的营养价值和更方便易熟的特点,且黄曲霉毒素和菌落数均未超标。
Extruded rice grains is an emerging health functions with a staple dia of raw materials, does not yet have recognized evaluation methods and national standards. The traditional rice inspection standards as a basis for extruded rice grains nuWition project quality control indicators were studied to determine the extrusion cereals rice nutrient content and quality and safety indicators, and with the commercially available northeast of rice were compared. The experimental results show that the crude fat content of the extruded nutritional engineering cereals was 3.48%, the protein content was 15.06%, water-soluble protein content was 2.29%, ash content was 1.22%, potassium, iron, ~nc content were 444.3 rag/100 g, 3.44 mg/100 g, 2.24 mg/100 g, respectively. There were higher nutritional value and more convenient method of cooking. Besides, aflatoxin toxins and the number of colonies were not excessive.
